Saskatoon Bars

• canola cooking spray
• 1/2 cup (125 mL) canola oil
• 1/2 cup (125 mL) non-hydrogenated canola margarine
• 2 cups (500 mL) granulated sugar
• 1 tsp (5 mL) vanilla
• 1 tsp (5 mL) almond extract
• 1/4 tsp (1 mL) baking soda
• 4 large eggs
• 1 1/2 cups (375 mL) all purpose flour
• 1 1/2 cups (375 mL) whole wheat flour
• 2 cups (500 mL) saskatoons, blueberries, raspberries or strawberries, fresh or frozen
Icing:
• 1 cup (250 mL) icing sugar
• 1 Tbsp (15 mL) canola margarine
• 1 tsp (5 mL) almond extract
• 1 – 2 Tbsp (15-30 mL) milk

Preheat oven to 350°F (180°C). Spray large 10.5 x 15-inch (26 x 38 cm) minimum, jelly roll pan or cookie sheet with canola cooking or baking spray.
In a large mixing bowl, cream together canola oil, canola margarine and sugar. Add eggs, vanilla, almond extract. Beat well.
In a second bowl, combine baking soda and flours. Add to the canola and sugar mixture. Mix well.
Spread 2/3 of the batter in pan. Sprinkle with saskatoons or other berry. Using a teaspoon, drop the remaining batter over the berries and bottom layer.
Bake for 30-40 minutes or until cake tester inserted in base of bars comes out clean.
While the bar is baking, prepare the Icing. In a small bowl, mix together icing sugar, canola margarine and extract and enough milk to make a smooth pourable icing.
As soon as the bar is removed from the oven, drizzle icing evenly over the top. Allow to cool, and serve.

Yield: 40 bars.

Carrés :
• huile de canola en aérosol
• 1/2 tasse (125 mL) d’huile de canola
• 1/2 tasse (125 mL) de margarine à base d’huile de canola, non-hydrogénée
• 2 tasses (500 mL) de sucre granulé
• 1 c. à thé (5 mL) d’extrait de vanille
• 1 c. à thé (5 mL) d’extrait d’amande
• 1/4 de c. à thé (1 mL) de bicarbonate de soude
• 4 gros oeufs
• 1 1/2 tasse (375 mL) de farine tout usage
• 1 1/2 tasse (375 mL) de farine de blé entier
• 2 tasses (500 mL) de saskatoons (baies), de bleuets, de framboises ou de fraises, frais ou surgelés
Glaçage:
• 1 de tasse (250 mL) sucre à glacer
• 1 c. à table (15 mL) de margarine à base d’huile de canola, non-hydrogénée
• 1 c. à thé (5 mL) d’extrait d’amande
• 1 à 2 c. à table (15 à 30 mL) de lait

Préchauffer le four à 350 °F (180 °C). Enduire d’huile de canola en aérosol une grande plaque à biscuits d’au moins 10,5 x 15 pouces (26 x 38 cm).
Battre dans un grand bol l’huile de canola, la margarine de canola et le sucre. Ajouter les œufs, l’extrait de vanille et l’extrait d’amande. Bien mélanger.
Dans un deuxième bol, mélanger le bicarbonate de soude et les farines. Ajouter au mélange d’huile de canola. Bien mélanger.
Étaler 2/3 de la pâte sur la plaque à biscuits. Couvrir de saskatoons ou d’autres baies. À l’aide d’une cuillère à thé, recouvrir avec la pâte restante les baies et la première couche de pâte.
Faire cuire pendant 30 à 40 minutes ou jusqu’à ce que la sonde à gâteau insérée dans la base du carré soit propre.
Pendant que les carrés sont en train de cuire, préparer le glaçage. Verser dans un petit bol le sucre à glacer, la margarine à base d’huile de canola, l’extrait d’amande et assez de lait pour que le glaçage soit assez liquide pour pouvoir l’appliquer facilement.
Dès que les carrés sont retirés du four, étendre le glaçage de manière uniforme sur le dessus des carrés. Laisser refroidir et servir.

Rendement : 40 carrés.
