Lemon Pudding Paradise

• 1/2 cup (125 mL) sugar
• 1/3 cup (75 mL) all purpose flour
• Salt, pinch
• 2 tsp (10 mL) grated lemon zest
• 1/4 cup (50 mL) lemon juice
• 1 tbsp (15 mL) butter or margarine, melted
• 3/4 cup (175 mL) milk

Beat egg whites in large bowl until stiff but not dry. In separate bowl, stir together sugar,
flour and salt. Whisk in lemon zest, lemon juice, butter or margarine, milk and egg yolks.
Gently fold whipped whites into lemon mixture. Pour into greased 1-quart (1 L) baking
dish. Place baking dish in a shallow pan of hot water so that the water rises 1 inch (2.5
cm) up the sides of the baking dish. Bake in a preheated 350°F (180°C) oven until top is
lightly browned, about 35 to 40 minutes. Serve warm or cold. Sprinkle pudding cake with
icing sugar or top with a dollop of whipped cream.

PARADIS DE POUDING AU CITRON

• 3 œufs, séparés
• 1/2 tasse (125 ml) de sucre
• 1/3 tasse (75 ml) de farine tout usage
• Pincée de sel
• 2 c. à thé (10 ml) de zeste de citron, râpé
• 1/4 tasse (50 ml) de jus de citron
• 1 c. à table (15 ml) de beurre ou de margarine, fondu(e)
• 3/4 tasse (175 ml) de lait

Battre les blancs d’œufs dans un grand bol jusqu’à ce qu’ils soient très fermes, mais pas secs. Dans un bol séparé, mélanger le sucre, la farine et le sel. Toujours en battant, ajouter le zeste de citron, le jus de citron, le beurre (ou la margarine), le lait et les jaunes d’œufs. Ajouter doucement les blancs d’œufs battus dans le mélange citronné. Disposer le tout dans un plat de cuisson d’une capacité d’un litre préalablement graissé. Placer le plat de cuisson dans un plat peu profond rempli d’eau chaude (l’eau chaude doit couvrir les côtés du plat de cuisson d’un pouce [2,5 cm]). Préchauffer le four à 350 °F (180 °C). Cuire jusqu’à ce que le mélange soit légèrement doré, soit environ 35 à 40 minutes. Servir chaud ou froid. Parsemez le gâteau au pouding de sucre à glacer ou recouvrez d’une bonne quantité de crème fouettée.
