BLT Egg Wrap

BLT recipe, wrap recipe, canadian recipe, Canadian cuisine• 1 slice chicken or turkey bacon, cooked
• 1 egg
• 1/4 tsp (1 mL) onion powder
• Salt and pepper, to taste
• 1 small low-fat flour tortilla (2 g fat)
• 2 tsp (10 mL) fat-free mayonnaise
• Leaf lettuce
• 2 Tbsp (30 mL) diced tomato

Cook the chicken or turkey bacon in non-stick skillet over medium heat or in microwave until
crisp; fold in half and set aside. Wipe skillet clean. Whisk together egg, onion powder, salt and
pepper in small bowl. Pour mixture into skillet; cook, stirring slightly, over medium heat. As
mixture begins to set, gently move spatula across bottom and sides of skillet to form large, soft
curds. Cook until eggs are thickened and no visible liquid egg remains, but are still moist. Spread
tortilla with mayonnaise. Place lettuce on top; add chicken or turkey bacon, egg and tomato.
Fold, wrap and serve.

SANDWICH ROULÉ BLT AUX ŒUFS

• 1 tranche de poulet ou dinde genre bacon
• 1 œuf
• ¼ c. à thé (1 ml) poudre d’oignon
• Sel et poivre, au goût
• 1 petite tortilla à la farine à faible teneur en gras (2 g de gras)
• 2 c. à thé (10 ml) mayonnaise sans gras
• Laitue frisée
• 2 c. à table (30 ml) de tomate coupée en dés

Faire cuire le poulet ou dinde genre bacon dans une poêle à frire antiadhésive à feu moyen ou au micro-ondes jusqu’à ce qu’il soit croustillant, puis plier en deux et mettre de côté. Essuyer la poêle. Battre au fouet l’œuf, la poudre d’oignon, le sel et le poivre dans un petit bol. Verser le mélange dans la poêle et faire cuire à feu moyen tout en remuant lentement. Lorsque le mélange commence à prendre, découper doucement l’œuf de haut en bas et de gauche à droite, à l’aide d’une spatule, pour faire de longues lanières molles. Faire cuire jusqu’à ce que les œufs ne soient plus liquides, mais bien consistants et humides. Étendre la mayonnaise sur la tortilla. Y déposer de la laitue et ajouter le poulet ou dinde genre bacon, l’œuf et la tomate. Rouler le sandwich et servir.
