On the banks of Calgary’s meandering Bow River, the elegant boutique Hotel Arts Kensington exudes the motto of Relais et Chateaux…comfort, calm and best of all in my books, cuisine. Their new restaurant, Oxbow, fits that respected organization with Canadian members like Langdon Hall, Manoir Hovey The Wickaninnish and Sonora Resort but it also fits the feisty, progressive city of Calgary perfectly.
Rupert Garcia (at right), Chef de Cuisine at Oxbow, likes to play with the menus, bending traditional comforts with creativity and skill – that’s just how art is made. His imaginative take on simple, good food is prepared with local, seasonal, Canadian ingredients, letting guests appreciate dining as it was meant to be… honestly uncomplicated.
He also happens to be a fierce, albeit friendly, competitor with vast experience at local, national and international chef competitions. Chef Garcia represented Canada and was a Silver Medallist at the International Chaines de Rotisseurs Jeunes Chefs Competition in Durban, South Africa in 2014 when he competed against 20 top global chefs.
