Araxi Restaurant and Bar, Whistler, British Columbia

Araxi Executive Chef James Walt should be very proud. He’s garnered Gold for our Innovation Awards and has been on the Vancouver Magazine Awards podium for years. It’s a testament to both Walt’s talent and leadership and, of course, his award-winning brigade.

He and his team take their inspiration from the producers of the Pemberton valley in which it’s so firmly planted and from the fishermen of the Pacific Araxi restaurant, Araxi Whistler, British Columbia food, traditional canadian food, Canada food, Canadian cuisineOcean.  As a ski-writer friend of mine who lives in Whistler says: “What awards haven’t they won?  It’s impossible to be disappointed.”

In 2012, Araxi earned a Gold Wine List Award at the Vancouver Playhouse International Wine Festival, as well as Best Whistler Restaurant at the Georgia Straight Golden Plate Awards. And this year, Araxi Wine Director Samantha Rahn won the Vancouver International Wine Festival’s 2013 Sommelier of the Year Award. Nominated from the top sommeliers in British Columbia and Alberta, and voted on by a wide cross-section of industry professionals, the award represents the highest level of achievement in Western Canada.

With the January 2018 opening of Il Caminetto, Top Table’s Italian-focused restaurant in Whistler, Chef Walt has relinquished most of the daily operations to Chef Quang Dang, another dedicated British Columbian who has been creating stunning locally-inspired dishes at West in Vancouver. Chef Quang and I first met while he was Executive Chef at Diva at the Met. Growing up in Calgary almost midway between his family roots in Vietnam and Scotland he moved to Vancouver to train for the Olympics as a member of Canada’s field hockey team. His substantial culinary talent was recognized right from the start when he began his career as a junior sous chef at West.

Over the ensuing years he worked in some of Vancouver’s finest kitchens and established himself as a strident advocate of sustainability and a dyed-in-the-wool champion of British Columbian coastal cuisine.  His competitive spirit took hold again and his star began to really shine when he competed for Canada in the Bocuse D’Or in Lyon, France.   He ‘returned home’ to West as Executive Chef in September 2011, where he led one of the finest culinary and service brigades in the country.
