A “thali” is a traditional style of meal but also a kind of kitchenware.  Like dishes within a dish, there are several smaller vessels on a platter. Composed of contrasting flavours, textures, with complimentary spices and aromas, the results are balanced, complex and absolutely delicious. This method of presentation and service offers a plethora of flavours once reserved only for special occasion but has become popularized in homes through out India and around the world.

At his restaurant, Thali, award-winning chef and author Joe Thottungal shares his culinary philosophy of traditional Kerala cooking styles combined with seasonal Canadian ingredients. Thali and the culinary team under his leadership interprets a new style of Canadian cuisine representing Chef Thottungal’s lived experience.  At the helm of two amazing Ottawa eateries, Thali and the newly re-opened Coconut Lagoon he connects his past and present without any compromise to flavor or authenticity. Joe is an awarded chef with a strong reputation as a community builder.
