Shadow Lawn Country Inn, Rothesay, New Brunswick
A winding, tree-lined road that follows the course of the Saint John River leads to Shadow Lawn in Rothesay. The beautiful 19th century mansions speak of an era that is fast disappearing.
Shadow Lawn is one of those stately homes, build in the 1870s by James Robertson, the founder of what was the largest department store in the ocean-front city of Saint John. This huge, then-pillared manor was built as a summer home and named Karslie, after a battle that occurred during the Crimean War and made Robertson’s uncle a hero.
In 1986 the Inn was sold to Patrick and Margaret Gallagher. Under their guidance Shadow Lawn has evolved into one of Atlantic Canada’s premier inns bearing international acclaim. As of July 1, 2010, Patrick and Margaret’s son, James and his wife Mary Ann (McGuire), have become the current owners of Shadow Lawn Inn. With the help of their parents, they made gradual changes to the Inn and are attracting new visitors from all over the world. The inn’s architecture and interior are still quite impressive. The shaded garden has been the scene of many weddings. The hospitality is gracious and professional. The food is a reflection of Atlantic Canada.
In the aptly named Robertson Restaurant, Chef Markian Shafransky creates thoughtful meals using the ingredients of Atlantic Canada. In season there’ll be wild garlic and asparagus vichyssoise with NB salmon tartare and smoked jalapeno oil or borscht made from beets roasted in the same earth they were grown in, pureed then ringed with dill oil and sprinkled with charred dulse powder. The seared tuna is paired with laminaria, an ocean-harvested kelp. He calls it ‘the flavours of sushi’.
Chef Markian describes this year’s menu: “At Shadow Lawn and the Robertson restaurant we do our best to use the most honest ingredients from the area. We purchase local when it makes sense…which is often.We buy from our friends and make all the cool stuff in house but at the same time we’re proud to serve the best local items that we don’t make. Our #FoodDayCanada menu highlights the kitchen’s commitment to many local artisans and suppliers and is based on the best products we can source at this time.”
