With these words Lamèque-born Chef Benjamin Cormier explains his take on the food life of this wonderful windswept region of Acadian New Brunswick.
After spending a few years working with his friend, Pierre Richard, at Little Louis’s Oyster House in Moncton, Ben opened this small, perfect restaurant that celebrates not only his ancient Acadian heritage but also the ingredients and culinary traditions of the region that were so often found in the home kitchens. The menu showcases a wealth of local seafood.
The Acadian story is one of hardship and creativity, tenacity and style. Throughout Atlantic Canada from Grand Pré in Nova Scotia and Les Iles de la Madeleine to the southwest coast of Prince Edward Island, you will find enclaves of true Acadian culture. Origines Cuisine Maritime reflects all those elements of his culture.
