Jesse Vallins, the Executive Chef of the Maple Leaf Tavern brings a ton of street cred to this kitchen. He’s won the “Toronto Sausage League” championship three times…a perfect addition to any tavern’s menu.  As a well-read culinarian, he develops curriculum for George Brown College, one of the nation’s largest culinary schools. The building (c.1910) spent most of the last century as a hotel ‘for travelers’ in the era when public houses were part of the cultural landscape.  As times changed, so did the reputation.  The Toronto Star’s well-read restaurant critic, Amy Pataki, wrote: “Forget everything you heard about the old Maple Leaf Tavern. The ugly Leslieville dive bar has turned into a beautiful swan of a restaurant. Managing partner Todd Morgan (Port Restaurant in Pickering) spent around $1 million to create sexy rooms that mix old and new, high and low, with a laser focus on food, drink and decor.”
