Going for a walk on a cool brisk Fall evening, you catch a smoky whiff of birch logs on a fire. For me, that aroma transports me back to memories of warmth and crackle of a campfire. There is something about a live-fire that awakens the minds of Canadians. What better way to experience regional local food than with the smells and flavours from cooking over live-fire in the Rockies of British Columbia.

Working closely with local farmers, producers and even foraging on property, Chef Stephan Drolet with his team have developed a truly unique dining experience. Undeniably marching in tune with the changing seasons of the mountains and valleys in the Rockies. Chef Drolet’s creativity and use of local ingredients absolutely shines through in some of his previous Food Day Canada menu items.

Imagine High Hung Yarrow Meadows Duck Breast that is glazed in Birch syrup and air dried for 10 days. Then served with Highwood Crossing Organic Porridge, Local roasted beets, pickled rhubarb and burnt honey glazed carrots. What about a whole celeriac baked over the mesmerizing embers of the fire with local cauliflower, charred broccolini, brown butter gnocchi and smoked Birch oil. His menus tell a story of the abundant ingredients of mountain life, truly adding local flavour to each dish. Whiskey Hill Farms Longhorn Beef Tenderloin on potato pave, Yukon Gold pomme puree, horseradish sauce, fire-roasted leeks, “Vichyssoise” with High Half Acre Farms young kale…YES PLEASE!
