Fairmont Le Château Montebello, Montebello, Quebec
Located in the heart of the beautiful Outaouais region in Quebec is a truly unique property, Fairmont Le Château Montebello. Surrounded by forests, farms and gardens, it is a chefs dream. Executive Chef Yann Gauthier and Executive Sous-Chef Maxime Delmont are constantly inspired by the fresh ingredients available to them by local producers. They showcase this bounty in various plates available on the seasonal menu of the year-round restaurant Aux Chantignoles. Particularly, Montebello was also a Quebec favourite of Anita Stewart, founder of Food Day Canada. In her 1999 book Great Canadian Cuisine she describes this historic property and their commitment to local food.

“Le Château Montebello is part of the long history of Québec. The hotel and its extensive property were once a seigneur, which the Company of One Hundred Associates ceded to Bishop Laval in
1674. More than a century later, the 65,000-acre tract of land, then known as the Seigneury de la Petite Nation, came to be owned by Louis-Joseph Papineau, leader of the 1837 Rebellion. In 1930, Le Château Montebello, the largest log structure in the world, began to take shape in what was still the wilderness bordering the Ottawa River, halfway between Montréal and Ottawa. A railway was built to transport more than 10,000 western red cedar logs that were used in the primary construction. An amazing engineering project with its multistoried stone fireplace, the hotel has since hosted heads of state, leaders and royalty.
Le Château Montebello’s menus feature local ingredients. From Papineauville goat’s milk cheeses to smoked rainbow trout harvested at the aquaculture station in Kenauk. Le Château Montebello’s private preserve that encloses seventy lakes. A team of biologists cares for the lake-dotted domain and the ponds used to breed, stock and harvest brown, rainbow and brook trout. One of the largest expenses at Kenauk is the cost of mantles for the gas lamps, dozens of them, that light the resort’s cabins, each on its own lake to assure utter and complete privacy.” — Anita Stewart excerpt from Great Canadian Cuisine, 1999
