The Lobby Lounge and RawBar at Fairmont Pacific Rim Hotel, Vancouver

The RawBar is Vancouver’s first 100% Ocean Wise sushi bar where Tokyo-born Sushi Chef Taka Omi uses an amazing array of locally-produced Vancouver ingredients including soy, wasabi and miso. When asked about pairings for the Food Day Canada menu, Wine Director Jill Spoor wrote, “Our local island wines are so special because of their oceanic influence and the new vintage of Sea Star Blanc de Noir Rosé is a perfect example of this. The wine is 100% Pinot Noir Grapes from both Saturna and Pender Island which make this wine a fresher and more elegant style of Rosé. It also explains why this wine makes such a stunning pairing with our BC salmon, a true connection from the ocean to the glass.”
The Lobby Lounge, where the menu is also available, has been named to the top 10 hotel bars in the Americas by Tales of the Cocktail, the internationally recognized cocktail program that provides a bespoke experience inspired by world travel and the stories it tells. The cocktail program at the Botanist bar is expertly designed by a roster of some of the nation’s best bartenders and takes Canada’s cocktail culture to new heights. That same team was crowned “World’s Best Bar Team” by Bols in Amsterdam earlier this spring while Head Bartender, Jeff Savage, competed and won the title of “World Class Bartender of Canada 2019”!
