There are few things I find as exciting as watching the evolution of a restaurant team like that at CharCut and how they dream in such a large scale. To most anyone else, the old Simmons building would be just too much to tackle. But not for Connie DeSousa and John Jackson. This seriously talented, modest pair of chefs with their partners own CharCut Roast House in downtown Calgary and constantly engage and celebrate culinary talent in others. Excellence just seems to dance in circles around them.
In the heart the East Village neighbourhood, which is in the throes of a fantastic $51 million re-development, charbar will become this regions culinary soul. Executive Chef Jessica Pelland (pictured at right) writes, “our menu is inspired by a celebration of Western Canadian ingredients; from the ocean, prairies and local gardens.”
Pelland is an award winning new radical and fierce competitor in the culinary arena. She is a Chopped Canada winner and profiled as one of Western Canada’s top culinarians in Western Living and Chatelaine magazines. A born-and-bred Calgarian, her culinary roots are loyal to Alberta soil. Since 2010, Chef Pelland has been cutting her teeth and sharpening her skills working alongside John Jackson and Connie DeSousa at CHARCUT Roast House as their right hand.
She specializes in whole-animal butchery, curing, grilling, roasting, and working magic in her refined rustic-cooking style and in her “spare time”, she hunts and fishes.
In 2015, Chef Pelland began her charbar journey having eaten and cooked her way through iconic culinary destinations like New York, San Francisco and further south to Argentina. This journey of discovery defines and inspires charbar’s food philosophy and identity. At the helm of charbar, Jessica continues to travel, stage and collaborate with some of the world’s most influential chefs of this decade. She is often found at 7K Ranch, near Millarville, cooking and just hanging out with her girls.
