Borealis Grille and Bar is a restaurant making a difference and setting a new standard for Ontario, and possibly Canada. The Desautel family just get it. Bob Desautel’s wee granddaughter, Ava, holds a sign at the left that sums up their entire raison d’etre.
Not only is the interior built from local stone and wood, with tables made from a black walnut tree felled in downtown Guelph, the food and beverages are almost completely sourced within the province. These people walk the talk!
Some of my faves are the True North flatbread which is loaded with ground bison, field mushrooms and caramelized onions and topped with melted smoked cheddar and the classic fish and chips made with Lake Huron whitefish and Taste of Ontario beer batter.
It’s worth the drive to Guelph from almost any region in Ontario for their twelve-hour braised, smoked Conestoga Co-op pulled pork shoulder on toasted sourdough Bread doused with a mop of their amazing barbecue sauce.
Borealis continues to push the ‘sustainable’ envelope by using electricity supplied by Bullfrog Power, 100% water and wind generated. Solar panels for hot water are being installed. Kitchen scraps are stored for a local pig farmer’s weekly visit, take out containers are made from recycled materials and in-house menus are printed on FSC products.
