Their tagline is “Canadian Ingredients ~~ Canadian Wine ~~ Canadian View” The unspoken one…at least publicly is “we don’t buy things in, we make things here.”
Since John Morris took over as the Executive Chef, the dining experience at 360 has become even more stridently Canadian. He hails from the renowned National Arts Centre in Ottawa where every meal was expected to reflect our nation’s cuisine.
Food and Beverage Director Peter George grew up in Southern Ontario’s farming heartland and credits that with his commitment to fresh market food and locally grown produce. According to Mr. George, what he sees when he looks out from his kitchen in the sky is “his immediate shopping area” and he features custom grown herbs, produce and other ingredients from local farmers and vintners. With General Manager Cameron Dryburgh, theirs is a formidable team!
100 KM food supplies some extraordinary produce while Organic Oceans makes sure the fish and shellfish is sustainable. The cherries for the cheesecake are direct from Niagara in season, then frozen.
Whatever this team can do to introduce tourists and locals alike to the food life of Canada, they are doing with style and enthusiasm. 360′ is a truly happy place.
At 351 metres (1151 ft.), this “cellar in the sky” (Cameron’s favourite place) the highest in the world. Created to resemble a typical underground wine cellar, it features precision climate and humidity controls, redwood racks, double cherry doors, a 9,000 bottle storage capacity and a tasting table. 360 features an extensive, award-winning wine selection from Canada.
For 2018, the team went all out! Not only did the Executive Chef and his team collaborate with Chefs Marc Lepine (Atelier), Keith Pears (Delta Toronto), Murray McDonald (consulting chef, B.C.) and Patrick McMurray (a.k.a. Shucker Paddy) to serve forth food all afternoon on the Observation Deck but they served a Food Day Canada menu in the glorious 360′ Restaurant as the Tower itself, the highest beacon in North America, was splashed with the Food Day Canada colours. In 2019, they did the same, this time including Valerie Jankovich (University of Guelph; JW Foster (Fairmont Royal York) and others.
