The Chase, Toronto

When one looks at the various restaurants, including Colette Grand Café, that The Chase Group handles with such an emphasis on fresh seafood and produce, it’s little wonder that Tyler Shedden was named Culinary Director.  His recent bio is peppered with high end experience but his childhood was spent on Quadra Island helping to operate his parents inn and restaurant. There’re few more idyllic places and the ocean’s harvest included every species of salmon and rockfish right through to beach oysters and sea urchins.

At The Chase, Chef de Cuisine Taylor McMeekin (right) creates menus that are a testament to some of the finest fish in Canada whether it’s Fogo Island cod or B.C. Dungeness crab.

There’s hemp-crusted Johnstone Strait (not far from Quadra Island actually) wild salmon and grilled Humboldt squid.  Octopus is  roasted & tossed in salsa verde with piquillo peppers. Scallops and pork belly (at left) have a base of Thai green curry.  There are a number of imaginative vegan dishes..from a seasonal white asparagus soup with candied pine nuts, coffee and cocoa to carrots encased in pastry with ras el hanout raisins.
