Yellow Door Bistro, Calgary
At the same address as the Hotel Arts Raw Bar you’ll find a separate a second distinctive dining experience. Chef de Cuisine Quinn Staple creates heart-warming bistro-inspired cuisine but his stage at Alinea, Grant Achatz’s modernist three-Michelin-starred restaurant in Chicago, has also had an impact on his style.
His ingredients and many of the dishes are creatively classic. Where better than Alberta to dine on Steak Frites? He serves the grilled hanger steak with pommes frites, a red wine jus and a spoonful of herb butter. The rabbit and foie gras rillette brioche is sparked with the bite of whole grain mustards and a salad of pickled vegetables. Mussels and clams are topped with garlicky basil aioli and served with a crusty French baguette. The cassoulet (below right)has a crispy confit leg of duck, a smoked pork hock and a roast duck velouté
If you pass on the vanilla l’île flottante swimming in crème anglaise (at left), you may want to try the macaroon with a bergamot sorbet. The Weekend Brunch is one of the restaurants signature meals when Chef Staple serves up different ‘surprise’. He uses tiny Le Creuset Mini Cocottes to serve dishes like duck confit cassoulet with poached eggs, wild mushroom grits or a sumptuous veggie-laden frittata.
At The Yellow Door Bistro they take service seriously. So much so that James Werner’s name as General Manager appears on all the restaurant menus.
It’s a real acknowledgement of the importance of teamwork and how the front of the house shares the same billing as the talented kitchen
