Yellow Door Chef de Cuisine Quinn Staple creates heart-warming bistro-inspired cuisine but his time at Alinea, Grant Achatz’s modernist three-Michelin-starred restaurant in Chicago, has also had an impact on his style. Quinn does a great job supporting local and regional suppliers like Lambtastique Farms near Vulcan; Highwood Crossing Farms in High River (for flours, oats, grains); Poplar Bluff Farms near Strathmore (for carrots, beets, potatoes); Noble Meadows Goat Cheese in Nobleford; Rainbow Trout sourced from Elbow River; Spragg Meats (pork); Honey Meadows Honey from Dewinton….and so it goes.
Many of the dishes are creatively classic. Where better than in Alberta to dine on Steak Frites? He serves the New York steak with pommes frites, a red, pepper jus and a spoonful of herb butter. Smoked prosciutto is paired with cantaloupe, chèvre and honey vinaigrette. The duck breast is brined in chamomile and served with morels. All the seafood is OceanWise certified.
The Yellow Door Bistro was recognized with Calgary’s White Hat Award for Best Restaurant 2015. It’s a real acknowledgement of the importance of teamwork and how the front of the house shares the same billing as the talented kitchen.
