Le Select, Toronto

Le Select is the very essence of hospitality with food to match and is renowned for its stellar service!  It would be interesting to know whether any restaurant of similar size in Toronto has as many ‘regulars’…somehow I doubt it. 

Chef Laura Maxwell and Frédéric Geisweiller, co-owner, share the same vision. The food they serve must be “good” as measured by three objective criteria: 1/ good for the health of the people who consume it, 2/ good for the livelihood of those who produce it, and 3/ good for the environment. So sourcing local ingredients, where these benchmarks can be checked and verified, is de rigueur.

Yet, with all this home-grown food, Le Sélect manages to offer the most authentic French food found in Toronto, so much so you’d believe you are in Paris. Chef Laura makes all the charcuterie in house. The selection changes periodically and can consist of Corsican Capicollu, Saucisson sec des Pyrénées with Espelette pepper, fresh ham dry-cured and aged in the cellar –as in Bayonne, smoked Duck breast, a classic Pâté de Campagne, Boudin blanc, and an air-dried beef Brési.

The lamb for the gigot is sourced from a family-run farm in Millgrove, Ontario, where the animals are humanly raised and pastured. Brandade de Morue, a new bistro staple, features Fogo Island Cod whipped with potato purée and herb-infused olive oil. Gratinéed under the salamander, it is served with a toasted sourdough rye baguette, also baked on-site.

The Goat Cheese salad features Golden Blyth’s Goat Gouda, a semi-firm aged goat cheese shaved over local organic mixed greens, roasted heirloom beets, toasted hazelnuts, acidulated shallot, with a honey and apple cider vinaigrette. ”

For dessert, the classic Paris-Brest, named after the most gruelling bicycle race, is a must. And you don’t have to bike a 1,200 kilometer single-stage to enjoy it. Le Select’s l’ile flottante may just be the best on the planet!
