FanJoy Restaurant, Hillsburgh, Ontario

Becoming a competitive and award-winning chef is not for the faint of heart.  But Pam Fanjoy who earned her Masters in Social Work and left a very successful career in mediation and therapy, did just that.  She was always cooking for friends – we know how healing that can be in itself – but the idea of cooking for a living was tempting and to her veteran colleagues surprise, she went back to school…culinary school.

For two years she commuted to George Brown College in the heart of downtown Toronto and perhaps because she was a mature student, her fire to succeed was evident. It was that same fire that propelled her to the win Chopped Canada’s grand prize in 2016.

Fan/Joy is a rustic, very casual place in a quintessential rural Ontario village on the way to the estates that dot the region and cottage country further north. Her diners are a lovely cross section of regulars and commuters but they are all people who live for honest, local, delicious food. And because Hillsburgh is on the weekend route north to cottage country, she has a large array of frozen meals to go and freshly baked pastries, either her own or those from the renowned Dufflets Bakery in Toronto.  She’s also very close to the Elora-Cataract Trailway, one of the most scenic bike routes in the province.

At this writing she’s enlarging the bar to serve an ever growing list of local beers.  We love her mushroom flatbread loaded with caramelized onions and there’s always her butter chicken, the dish that won the $10,000 prize on Chopped Canada.

Her fish and chips are wonderful and the burgers…well, have one for yourself.  She uses Elora Bread Trading Company’s breads and Elora Brewing Company’s beer is in the calamari batter…or on tap.
