Pork Medallions with Apples

• 1/8 tsp (.5 mL) nutmeg
• 6-7 oz (170-200 g) pork tenderloin, cut into 1/2-inch (1.25 cm) slices
• 1-2 tsp (5-10 mL) green peppercorns, crushed
• 1 tsp (5 mL) canola oil
• 1/2 green apple, unpeeled
• 1/2 Tbsp (7 mL) canola oil
• 1 tsp (5 mL) cornstarch
• 1/2 cup (125 mL) apple juice

In a small bowl, combine garlic powder poultry seasoning and nutmeg. Sprinkle on pork. Press peppercorns lightly into meat slices.
In a wok or large skillet heat 1 tsp (5 mL) of canola oil. Meanwhile, core apple and cut into thin slices. Saute apple slices in canola oil, about 3 minutes. Remove from wok. Add 1/2 Tbsp (7 mL) canola oil and pork slices to wok and brown, about 2 minutes per side. Remove from wok.
In another bowl, combine cornstarch and apple juice; add to wok. Heat until thickened. Add pork slices, cover and simmer about 8 to 10 minutes.
To serve, place pork slices on a serving plate. Top with apple slices and a few green peppercorns; spoon sauce over all.

Yield: 2 servings.

MÉDAILLONS DE PORC AUX POMMES

• 6 à 7 oz (170 à 200 g) de filets de porc, coupés en lanières de 1/2 pouce (1,25 cm)
• 1/4 de c. à thé (1 mL) de poudre d’ail
• 1/2 c. à thé (2 mL) d’assaisonnement pour volaille
• 1/8 c. à thé (0,5 mL) de muscade
• 1 à 2 c. à thé (5 à 10 mL) de grains de poivre vert, broyés
• 1 c. à thé (5 mL) d’huile de canola
• 1/2 pomme verte, non pelée
• 1/2 c. à table (7 mL) d’huile de canola
• 1/2 tasse (125 mL) de jus de pomme
• 1 c. à thé (5 mL) de fécule de maïs

Dans un petit bol, mélanger la poudre d’ail, l’assaisonnement pour volaille et la muscade. Saupoudrer le porc de ce mélange. Presser légèrement les grains de poivre dans la viande.
Dans un wok ou grand poêlon, faire chauffer 1 c. à thé (5 mL) d’huile de canola. Entre-temps, enlever le cœur de pomme et couper en tranches minces. Faire sauter pendant 2 à 3 minutes. Retirer du wok. Ajouter 1/2 c. à table (7 mL) d’huile de canola et les lanières de porc au wok. Faire brunir le porc pendant 2 minutes de chaque côté. Retirer du wok.
Dans un autre bol, mélanger la fécule de maïs et le jus de pomme. Verser dans le wok. Chauffer jusqu’à épaississement. Remettre le porc dans le wok. Couvrir et laisser mijoter pendant 8 à 10 minutes.
Déposer le porc sur un plat de service. Garnir de tranches de pomme et de quelques grains de poivre vert. Napper de sauce.

Rendement: 2 portions.
