Arroz Con Huevos

Heuvos recipe, azzoz con huevos recipe, canada recipe, canadian cuisine• 1 tbsp (15 mL) vegetable oil
• 3/4 cup (175 mL) chopped onion
• 3/4 cup (175 mL) chopped green pepper
• 1 clove garlic, minced
• 1 1/2 cups (375 mL) chopped tomatoes
• 3 cups (750 mL) cooked rice
• Hot pepper sauce, to taste
• 4 eggs

Heat oil in deep non-stick skillet or Dutch oven over medium heat. Add onion and green pepper; cook, stirring until onion is soft, about 6 minutes. Stir in garlic and tomatoes; cook 1 minute. Stir in cooked rice and hot pepper sauce; heat through. Poach or fry eggs in separate pan, to desired doneness. Spoon rice onto plate and top with eggs. Serve with hot pepper sauce, if desired.

Serves 4.

ARROZ CON HUEVOS

• 1 c. à table (15 ml) d’huile végétale
• 3/4 tasse (175 ml) d’oignon haché
• 3/4 tasse (175 ml) de poivron vert haché
• 1 gousse d’ail émincée
• 1 1/2 tasse (375 ml) de tomates hachées
• 3 tasses (750 ml) de riz cuit
• Sauce aux piments forts, au goût
• 4 œufs

Chauffer l’huile dans une poêle antiadhésive profonde ou un faitout à feu moyen. Ajouter l’oignon et le poivron vert et cuire en remuant jusqu’à ce qu’ils soient tendres, environ 6 minutes. Incorporer l’ail et les tomates; cuire 1 minute. Ajouter le riz cuit et la sauce aux piments forts, cuire jusqu’à ce que le tout soit chaud. Pocher ou faire cuire les œufs poêlés dans une autre poêle jusqu’à l’obtention de la cuisson désirée. Répartir le riz dans les assiettes et garnir d’un œuf. Accompagner de sauce aux piments forts, si désiré.
