Phil Moses of France
Hi! I’m a Torontonian living in Buxerolles, in the Poitou-Charentes region of France.
I’ve been promoting Canadian style bbq here for the 2 years I’ve been here with the help of some friends who have lived in Canada and also a fellow Ontarian from Elliot Lake.
It never fails to amaze me that a country with as rich a culinary culture as France has completely missed the boat when it comes to BBQs. Here, the only thing you’ll find on a grill is merguez, chipolatas or andouillette(a sauage made from entrails and random bits…very good!), and at least half of the BBQs on sale are ELECTRIC!!! Blasphemy! I remember the first BBQ we hosted here. I did homemade banquetburgers and kiwi marinated porkchops; in short, a pretty pedestrain BBQ by Canadian standards. Nobody had every tasted anything like it and, although I planned plenty for everybody, it was all gone in the blink of an eye.
Next time, I’m going to do salmon with oak chip smoke and a side of topinambour (a VERY Canadian ingredient) fries.
