Bruce Archibald & Karen Atchison of Ontario, Canada
This is the second year that Karen and I will be participating in the World’s Longest BBQ. We had a blast last year doing it at our cottage in Southampton so we plan to do it again!
We will be having Karen’s sister and her family join us. We are certain it is going to be a beautiful summer day.
The pre-6pm event will include a fresh vegetable tray with a fresh dill dip along with my world famous jalpeno cheese ball (made with old Ontario cheddar) and complimented with “Archibald Orchard’s” Hard Cider (I’m a little biased on this but I truly believe it is the best Hard Cider anywhere!).
At 6pm sharp the BBQ will be lit and we will cook up a
medley of Ontario vegetables which will have been marinated in a mixture of balsamic vineger, canola oil, garlic and sesame seeds.
The feature entree will be Ontario rainbow trout quickly bathed in a spicy garlic chili paste sweetened lightly with Ontario honey.
And to round it out, fresh baby Ontario potatoes cooked in foil with butter and fresh rosemary along with some mouth watering Ontario corn on the cob.
To add to the tasting experience we will offer a choice of either a fine Ontario gewurtraminer or Riesling VQA wine.
The crowning piece to our meal will be a fresh wild blueberry pie (a great recipe which uses 1/2 cooked and 1/2 fresh blueberries) and if desired topped with Vanilla ice cream (made with real cream of course!).
And if anyone has enough room we will finish with some late harvest Vidal dessert wine as we get ready to have a camp fire and watch the stars…and if we’re feelng particularly patriotic you might hear us singing Oh Canada sometime in the evening!
