The location of the Blue Hat Bistro  in the Pacific Institute of the Culinary Arts could hardly be better…within a short walk from Granville Island Market.  Operated by internationally trained chefs and owned by one of Canada’s food legends, Yves Potvin. A former French chef, Quebec native and food entrepreneur, Yves is best known for his success in creating two internationally known, health-focused, lifestyle food companies; his eponymous Yves Veggie Cuisine and Gardein. He sees his leadership of Pacific Institute of Culinary Arts as a means to share his love of food, innovation and business acumen with the next generation of food and wine professionals and to support Vancouver’s local chef and food communities. In this city that is absolutely overflowing with talent in every cooking genre on earth, having new well-trained talent is essential.  These chefs in training are the future culinary stars of our country.

For over 20 years, Pacific Institute of Culinary Arts has been Vancouver’s leading culinary education centre. The award-winning culinary school offers professional diploma programs in the Culinary and Baking & Pastry Arts, as well as Wine and Spirit Education Trust (WSET®) certification, corporate team building, private events, catering and classes for food enthusiasts.

Their Food Day Canada menu showcases the unique local produce of British Columbia, artisanal food products and the bounty from our nation’s land and oceans. There is fish and seafood from both the Pacific and Atlantic coasts, grains and pulses from the prairies, maple syrup from Quebec and of course, Albertan beef. The bread basket is filled with freshly baked rolls, crackers, breads and the ever-popular corn muffins from the Baking & Pastry students. Wheat flour, rye, oats, flax and seeds are all proudly Canadian.

Every aspect of the menu is a teachable moment.  Whereas a decade ago, students rarely were taught the stories of the ingredients they were using, these young chefs are immersed in them.
