Bishop’s Restaurant, Vancouver
John Bishop has been Vancouver’s consummate host for over three decades. His restaurant, simply named “Bishop’s” is a quiet haven filled with extravagant bouquets, great works of art from John’s personal collection and extraordinary food. In 2011, his contribution to Canada was recognized at Rideau Hall by then Governor General Michaelle Jean and her husband Jean-Daniel LaFond, as a Canadian culinary icon. Together they presented him with one of the inaugural Nation’s Table Awards.
One of John’s great gifts is his ability to judge young chefs ability to cook with their hearts as well as their heads and mentor them to greatness. From Calgary’s Michael Allemeier to Vancouver’s Vikram Vij to Mark Filatow in the Okanagan, his protégées have risen to the very top. For decades he has been ahead of the curve in sourcing and eating locally, organically, and sustainably.
Then came Chef Andrea Carlson who has opened her own renowned restaurant, Burdock & Co over on trendy Main Street.
Not much wonder that he was given a special Vancouver Magazine Award for Mentoring. He has done as much for culinary Vancouver as anyone I know. A brilliant, kind, gentleman. In presenting the award, they write: “Bishop’s shaping of our culinary landscape has been nothing short of tectonic, with the proof of it served on thousands of plates across the city and beyond.”
The menus are as serene and as perfect as the restaurant itself. Executive Chef Josh Blumenthal’s credentials fit John’s vision perfectly. He’s all about local, seasonal, organic! Born in Edmonton, studied in Vancouver then worked in England and Denmark. He then came home and did a stint on Michael Ableman’s Foxglove Farm on Salt Spring Island.
With the onset of Covid, the pivoting began swiftly with take out and now carefully limited in house dining.
