Bar George, Montreal
When you grow up as a son of a hotelier, no matter where it is on earth, the whole notion of hospitality gets into your blood. Whether the young Kevin Ramasawmy was flipping omelettes and making curries with his mother, or tagging along with his father at the hotel and restaurant where he worked, Kevin’s life revolved around cooking, hospitality, and – best of all – eating.
In 2004, at the age of 19, Kevin moved from Mauritius to Montreal. He fell in love with the city and his future wife, and was compelled to stay and make a living. Although he started out in front of house, he ended up in the kitchen, learning and growing till he moved to Toronto to work under Chef Anthony Walsh at Canoe Restaurant & Bar. At the time there were few better training grounds than this restaurant to understand the notion of how Canadian cuisine and fine dining mesh.
He headed to New York to work at Daniel with our friends Eddy Leroux and Daniel Boulud. But Montreal was home and he returned to eventually be reunited with Chef Walsh in the kitchen of Bar George. Now in Montreal, he’s opening a whole new culinary chapter as the Chef de Cuisine as he celebrates “the old in new ways” at Le Mount Stephen Hôtel the grand heritage home once belonging to Sir George Stephen. Paying tribute to Sir George’s British and Canadian ties, Chefs Anthony Walsh and Kevin Ramasawmy playfully (and thoughtfully) smack together classic U.K. cooking, current Québécois flavour and quality, homegrown ingredients from the full English breakfast to the beautiful pork hock ‘persille’.
