Wild Rice and Potato Pancakes with Corn Salsa

• 3 cup (750 mL) washed, grated potatoes (preferably Russet)
• 1 Tbsp (15 mL) lemon juice
• 1 cup (250 mL) cooked wild rice
• 1 egg, slightly beaten
• 1/2 cup (125 mL) whole wheat flour
• 1 Tbsp (15 mL) prepared mustard
• 2 Tbsp (30 mL) fresh dill
• 2 Tbsp (30 mL) canola oil
• 1/2 tsp (2 mL) salt
• 1 tsp (5 mL) freshly ground pepper
• 3-5 Tbsp (45-75 mL) canola oil for frying


Roasted Corn Salsa
• 2 cobs of corn, husked
• 2 Tbsp (30 mL) canola oil
• 1 small white onion, finely diced
• 2 garlic cloves, minced
• 1 chiles in adobe sauce, chopped
• 1 small red pepper, finely diced
• 2 Tbsp (30 mL) fresh dill, finely chopped
• 1/2 tsp (2 mL) salt
• 1/4 tsp (1 mL) pepper

In a large bowl, place grated potatoes. Cover with cold water and add lemon juice, to prevent darkening. Just before making pancakes, drain water from potatoes; place potatoes in a clean, dry dish towel and squeeze out all excess water.
Return potatoes to large bowl, and combine with rice, egg, flour, mustard, dill, canola oil and salt. Mix well to combine ingredients.
In large non-stick skillet, heat 1 Tbsp (15 mL) of canola oil over medium high heat. Place about 1/4 cup (60mL) of the potato mixture into the hot oil and gently flatten with spatula. Fry for 3-4 minutes until edges are crisp; carefully flip. Fry 3-4 minutes until golden brown. Drain on paper towels and repeat, adding more canola oil as needed, until all the mixture is cooked. Keep warm in oven until ready to serve.
To prepare salsa: Preheat grill or set oven to broil. Husk the corn, brush with 2 tsp (10 mL) of the canola oil and broil (or grill) until kernels are slightly charred. Cool then cut kernels off ears.
In large non-stick skillet, heat remaining oil over medium heat. Add onions, garlic, chiles in adobe sauce and red pepper. Cook until just softened. Add the corn and cook until vegetables are heated through. Add the dill, salt and pepper and remove from heat. Serve the salsa over the pancakes.

Yield: 12 pancakes and 1 1/2 cup (375 mL) salsa.

CRÊPES DE POMME DE TERRE ET DE RIZ SAUVAGE AVEC SALSA DE MAÏS

Crêpes
• 3 tasses (750 mL) de pommes de terre râpées (si possible, Russet)
• 1 c. à table (15 mL) de jus de citron
• 1 tasse (250 mL) riz sauvage, cuit
• 1 oeuf, légèrement battu
• 1/2 tasse (125 mL) farine de blé entier
• 1 c. à table (15 mL) moutarde préparée
• 2 c. à table (30 mL) d’aneth frais
• 2 c. à table (30 mL) d’huile de canola
• 1/2 c. à thé (2 mL) de sel
• 1 c. à thé (5 mL) de poivre fraîchement moulu
• 3 à 5 c. à table (45 à 75 mL) d’huile de canola pour la friture

Salsa de maïs
• 2 épis de maïs, épluchés
• 2 c. à table (30 mL) d’huile de canola
• 1 petit oignon blanc, coupé en petits dés
• 2 gousses d’ail, coupées fin
• 1 chili en sauce adobe, haché
• 1 petit poivron rouge, coupé fin en dés
• 2 c. à table (30 mL) aneth frais, coupé fin
• sel et poivre, au goût

Placer les pommes de terre râpées dans un grand bol. Recouvrir d’eau froide et ajouter le jus de citron pour empêcher les pommes de terre de noircir. Juste avant de faire les crêpes, enlever l’eau. Pour s’assurer que les pommes de terre soient bien séchées, les placer dans un linge propre et sec, et tordre ce dernier pour enlever l’excédent d’eau.
Dans un grand bol, combiner les pommes de terre, le riz, l’oeuf, la farine, la moutarde, l’aneth, l’huile de canola et le sel. Bien mélanger les ingrédients.
Chauffer une c. à table (15 mL) d’huile de canola dans un grand poêlon antiadhésif à feu moyen. Placer environ 1/4 de tasse (60 mL) du mélange de pommes de terre dans l’huile de canola et aplatir délicatement avec une spatule.
Faire frire pendant 3 à 4 minutes jusqu’à ce que les contours soient croustillants; retourner délicatement. Faire frire pendant 3 à 4 minutes jusqu’à ce que les crêpes soient d’un brun doré. Égoutter sur un essuie-tout et répéter l’opération, en ajoutant de l’huile de canola au besoin, jusqu’à ce que tout le mélange soit cuit.
Garder au chaud dans le four jusqu’au moment de servir.
Préchauffer le grill ou régler le four à gril (broil).
Éplucher le maïs, badigeonner 2 c. à thé (10 mL) d’huile de canola et faire griller jusqu’à ce que les grains soient légèrement carbonisés. Laisser refroidir, puis séparer les grains de l’épi.
Dans un grand poêlon antiadhésif, faire chauffer à feu moyen l’huile de canola restante. Ajouter les oignons, l’ail, le chili en sauce adobe et le poivron rouge. Cuire jusqu’à ce que le tout commence à s’amollir.
Ajouter le maïs et cuire jusqu’à ce que les légumes soient complètement cuits. Ajouter l’aneth, le sel, le poivre et retirer du feu.
Verser la salsa sur les crêpes.

Rendement : environ 12 portions de 2 à 3 c. à table (30 à 45 mL), 12 crêpes.
