Tortilla de Patatas

Tortilla de Patatas, appetizer recipe,canada recipe, canada food, canadian cuisine• 2 Tbsp (30 mL) olive oil
• 3/4 cup (175 m ) chopped onion
• 4 cups (1 L) Yukon Gold potatoes, peeled and cubed in 1/2-inch (1.5 cm) pieces
• 1/2 tsp (2 mL) salt
• 6 eggs
• 1/4 cup (50 mL) finely chopped sweet red pepper (optional)
• 1 Tbsp (15 mL) finely chopped fresh parsley (optional)

Heat oil in large non-stick skillet over medium heat. Add onion; cook, stirring about 3 minutes. Add potatoes; cook until tender and golden, about 8 minutes. Season with salt. Whisk eggs in large bowl. Stir in onion-potato mixture, sweet pepper and parsley, if using. Pour egg mixture into skillet over medium heat; cook 1 minute. Reduce heat to low; cook until eggs are set in centre and lightly browned on bottom. Slide omelette onto large flat plate. Place another plate on top; flip to invert. Slide back into skillet; cook 2 to 3 minutes longer.
Oven Method: Pour potato/egg mixture into 9-inch (23 cm) pie plate brushed well with olive oil. Bake in 325°F (160°C) oven until set in centre, about 35 minutes.

Serves 6.

TORTILLA DE PATATAS

• 2 c. à table (30 ml) d’huile d’olive
• 3/4 tasse (175 ml) d’oignon haché
• 4 tasses (1 l) de pommes de terre Yukon Gold pelées et en dés de ½ po (1,5 cm)
• 1/2 c. à thé (2 ml) de sel
• 6 œufs
• 1/4 tasse (50 ml) de poivron rouge haché finement (facultatif)
• 1 c. à table (15 ml) de persil frais haché finement (facultatif)

Chauffer l’huile dans une grande poêle antiadhésive à feu moyen. Ajouter l’oignon et cuire en remuant pendant environ 3 minutes. Ajouter les pommes de terre et les cuire jusqu’à ce qu’elles soient tendres et dorées, environ 8 minutes. Saler. Fouetter les œufs dans un grand bol. Incorporer le poivron et le persil au mélange d’oignon et de pommes de terre, si vous désirez en utiliser. Chauffer la poêle à feu moyen et y verser les œufs. Cuire 1 minute. Réduire le feu à doux et cuire jusqu’à ce que les œufs soient cuits au centre et légèrement dorés en dessous. Glisser l’omelette dans une grande assiette. Mettre une autre assiette dessus et retourner. Remettre dans la poêle et laisser cuire 2 ou 3 minutes de plus.
Méthode au four : Versez le mélange d’œufs et de patates dans une assiette à tarte de 9 po (23 cm) bien badigeonnée d’huile d’olive. Faire cuire au four à 325 °F (160 °C) pendant 35 minutes ou jusqu’à ce que le centre soit bien cuit.
