Cucumber & Black Bean Salsa Salad

• 1 large cucumber, diced
• 1 cup (250 mL) sweet grape cherry tomatoes, halved
• 1 (15oz/443 mL) can black beans, rinsed and drained
• 1/4 cup (60 mL) finely chopped red onion
• 1 medium green bell pepper, seeded and finely chopped
• 1 medium jalapeno, seeded and minced (optional)
• 1/4 cup (60 mL) chopped fresh cilantro leaves
• 1 medium lime, zested and juiced
• 2 tsp (10 mL) cider vinegar
• 1 Tbsp (15 mL) canola oil
• 1/4 tsp (1 mL) salt
• 1/4 tsp (1 mL) pepper

In medium bowl, combine cucumber, tomatoes, beans, onion, peppers, cilantro, lime zest and juice, vinegar, canola oil, salt and pepper.
Toss gently yet thoroughly to blend. Serve immediately or cover and refrigerate up to 4 hours to blend flavours.

Yield: 10 servings.

SALADE SALSA AU CONCOMBRE ET HARICOTS NOIRS

• 1 grand concombre, coupé en dés
• 1 tasse (250 mL) de tomates cerise, coupées en deux
• 1 (15 oz/ 425 mL) boîte de conserve d’haricots noirs, rincés et égouttés
• 1/4 de tasse (60 mL) d’oignon rouge, coupé fin
• 1 poivron moyen, épépiné et coupé fin
• 1 poivron moyen jalapeño, épépiné et émincé (optionnel)
• 1/4 de tasse (60 mL) de feuilles de coriandre fraîches, coupées mince
• 1 lime moyenne, la pelure râpée et réduite en jus
• 2 c. à thé (10 mL) de vinaigre de cidre
• 1 c. à table (15 mL) d’huile de canola
• 1/4 de c. à thé (1 mL) de sel,
• 1/4 de c. à thé (1 mL) de poivre,

Dans un bol moyen, combiner tous les ingrédients.
Remuer délicatement jusqu’à le tout soit complètement mélangé. Servir immédiatement, ou recouvrir et réfrigérer jusqu’à 4 heures afin de marier les saveurs.

Rendement : 10 portions. 1/2 tasse (125 mL) équivaut à 1 portion.
