Since moving to Toronto from Italy in 2006, Chef Giacomo Pasquini has developed a real taste for Canada. After working as Vertical’s Sous Chef under renowned chef Tawfik Shehata, Pasquini took over the role of Head Chef. His menus are Ocean Wise-approved and updated each season, gaining their inspiration from his upbringing and culinary training in Italy. Like many first generation Canadians, before arriving in Canada, he was unaware of the bounty of ingredients that the country, and more specifically, Ontario, had to offer. Once he realized that everything he needed for his dishes could be found within the Provincial borders, he made the decision to go completely local. Using pork fed with whey from Stratford’s Monforte Dairy is just one example of how Chef Giamono ensures high quality ingredients travel a minimal distance while supporting the local economy.
