Chef David Penny was snatched up by Four Seasons as soon as he graduated from Niagara Culinary Institute and sent to Hawaii. But the big island didn’t have the hold on his culinary sensibilities that the Peninsula did and when the opportunity arose to oversee the kitchens at two of Niagara’s most glamorous wineries, Chef Penny came home. Dividing his time between Inniskillin’s Founder’s Hall and Jackson-Trigg’s Tasting Gallery, he also over sees the catering menu which, when I was recently there, was a highlight of many days on the culinary trail. It was spring so he created a light, asparagus soup and poured it around a chunk of Upper Canada’s Comfort Cream cheese which he then toasted to a light golden and topped with a feather of a carrot seedling. It was amazing.
