Véronique won Canada’s Best Sommelier competition in 2006 and defended her title in 2012. She was honoured with the Wine Woman Award 2007 in Paris and took home the Best Sommelier of the Americas 2012 title. After placing twice in the Top Twelve in 2007 and 2010, she became the first woman to make the podium by taking 2nd place at the World’s Best Sommelier competition, in Tokyo in March 2013.

Marrow with salt Her formative years were largely spent at Restaurant Les Fougères, in Chelsea, Québec but since that prestigious competition, her life took another direction as consultant and speaker.   Now she can add “restaurateur” to her already stellar résumé.

With a beautifully built cellar, the wine list is refined and so is the food.  Begin with freshly shucked oysters or an appetizer of roasted bone marrow sprinkled with shallot smoked salt. I’m curious to know which wines she pair with the latter.

Trout - truite The menu reads beautifully– tartines; boards of cheese and charcuterie. Then follows a succession of small plates perfect for wine pairing a glass and a plate at a time.  Sweetbreads with browned butter and capers;  homemade boudin noir and an apple-Jerusalem artichoke purée; bison tartare and even a good hanger steak, the jus fragrant with star anise.
