Using the skills sets he learned from legendary chef Michael Stadtlander, owner Brodie Sobara is establishing his bistro-style takeout restaurant, Savoy Culinary. The location is unlikely…buried in the back of a small mall in Fergus, Ontario. But it also gives him the financial freedom to create some strikingly good French & Germanic inspired dishes served to walk-in customers. If you’re absolutely starving, there are a few tables, too.
Primarily a caterer, Chef Sobara organizes private dining in homes but also something the region sorely lacks…great take away. Wellington County has dozens of festivals and you’ll find him there…in particular at Elora’s amazing Riverfest.
He writes “Since inception our goal was to showcase Wellington county farmers, fresh Ontario product and sustainable Canadian fishery products on our menus. We source directly from farms and the menus are influenced by the many cultural backgrounds that make up Canadian cuisine.”
The menu is creative and approachable from mini-quesadillas with smoked shallots and aged cheddar to a more elaborate slow roasted, herb-stuffed porchetta roast. Fridays are ‘fish ‘n chips’ with fresh Lake Erie pickerel in an Elora Brewing Company’s beer batter. It’s absolutely delicious with a sumac-aioli! There are hand cut fries and if you want something meaty instead, you may find Top Market smoked lamb ribs with a side of slaw and a bowl of barbecue sauce. For Food Day Canada, he’ll be doing a dinner series and while he calls them ‘secret’ I expect that they won’t remain that way for long amongst his local fans.
