About a decade ago, Fairmont Hotels gave Le Manoir Richelieu (c. 1899) a $170 million make over. In it’s very early days it was constructed to emulate a French castle and, today, it really is a grand hotel on one of the earth’s most glorious rivers. At that point in La Malbaie, the St. Lawrence is wide and magnificent with mountainous hills that plunge into it and deep fiords that carve its banks reaching into the heart of Quebec. It is named after Cardinal Richelieu who supported the explorations of Samuel de Champlain, the founder of Quebec City.
Today the magnificent property flourishes. Perched majestically on a hillside, it is embedded in the Flavour Trail (Route des Saveurs), arguably Canada’s first such route dedicated to the regional culinary arts. And art is what this region is about. About 80% of the hotel’s ingredients come from this well-developed food region…from foie gras to its extraordinary cheeses. This is where the renaissance of Quebec cheese-making began 20 or so years ago but dairying and its attendant self-sufficiency has been important since Champlain brought the breed of cattle with him in the early 1600s that are now dubbed “Canadienne”.
The hotel’s menus sing of the seasons and the region. Smoked duck aiguillettes are from La Ferme Basque de Charlevoix, then paired with maple beets and yellow fruit chutney…the onion soup is enlivened with with Dominus Vobiscum beer from La Microbrasserie Charlevoix and topped with a croque monsieur made with Le Migneron, a cheese from La Maison d’affinage Maurice Dufour…and so it goes.
