Proof Restaurant, Waterloo, Ontario

Executive Chef Jeritt Raney was born in the small town of Tobermory, Ontario at the top of the Bruce Peninsula where he worked with his father at the family fishing business. But like most small town kids, staying really wasn’t an option. Both Jeritt and Proof’s General Manager, Laura Umbrio, worked with Oliver & Bonacini, the restaurant group that founded the legendary Canoe. It’s a small world in Kitchener Waterloo. Laura’s husband, Tim Duncan, another O&B veteran is the Manager/Chef at Harmony Lunch.

Jeritt writes, “We are in a unique location in Waterloo Region that doesn’t exist anywhere else in Ontario. We basically have everything at our fingertips, from the farms that are 2 minutes from our door, the streams for fishing, the forestry for foraging as well as easy access to the distribution channels from places like Collingwood and Niagara. We are at the centre point to all those connections”

The green salad is a great example of their philosophy. “When designing the menu, it was decided that a classic green salad should be offered. The Norfolk County Green salad is the Proof “house” salad. The farm in a box model for our ‘living lettuce’ provides the butter lettuce base for this salad. Greens are delivered live and rooted, and cut to order in house to provide the experience of field to fork to our guests. We use Elmira Maple syrup and Kozlicks mustard to create the dressing.”

The crème brulée is made with Guernsey milk and all seafood is Oceanwise certified. Proof offers premium water that is filtered and carbonated on site as an alternative to imported waters. We donate 1$ from every glass of water sold to the Great Lakes Conservation initiative.

The signature item that Proof is known for is the seasonally changing pork dishes. The passion for Ontario pork comes across in the many iterations of Chef Jeritt’s pork entrees from the Bone in Nagano pork schnitzel with purple cabbage to the apple cider brined Tamworth collar chop, the inspirational Ontario pork has endless possibilities including some of the Heritage breeds farmed in the surrounding area like Tamworth and Berkshire.
