It took a team of friends with a passion for local ingredients and tons of catering/restaurant experience to open this innovative new restaurant in Saskatoon. Chef Mike McKeown, who has been around the provincial catering industry for years including a stint cooking in remote northern fishing lodges , has partnered with Aaron Wignes as the General Manager.
The menus overflow with their creative takes on seasonal Prairie ingredients and old favourites. Take perogies, for instance, a nod to the eastern European heritage of that part of Canada. They make the dough in house and fill these wonderful little dumplings with wild harvested morels, spinach, roasted corn, squash and aged cheddar. There’s local pickerel, fished in the
freshwater lakes of Saskatchewan, atop a cassoulet made with Prairie beans and their own bacon. They beet-cure steelhead trout for a light summer meal.(at right). BBQ Pulled Pork (above left) is served on a housemade lentil bun with red cabbage slaw and tri-coloured beet chips. They also have a well thought through vegan menu – the pot pie sounds tremendous with winter vegetables, morels and lentils in a ‘tomato infused’ broth and topped with an almond milk biscuit.
Prairie Harvest walks the talk when it comes to their beverage offerings, too. There’s beer from Paddock Wood, the province’s first micro brewery and fruit wines from Living Skies Winery. The real star of the bar is Last Mountain Distillery’s whisky and vodka. The founders, Colin and Meredith Schmidt, even built their own still and located their operation in Lumsden, right in the heart of grain country.
Save room for dessert — doughnuts have a maple bacon glaze and bacon crème fraîche or you can sample a good old fashioned, strawberry~rhubarb cheesecake.
