On a bright summer’s day a falcon swoops and touches down briefly in the rooftop garden of The Fairmont Waterfront Hotel. Little wonder, for this lush, full fledged herbal garden is sheltered and quiet, even in the downtown heart of Vancouver. On the hotel’s third-floor terrace,there are eleven long beds, fully organic and irrigated, that bask in the sun or the coastal mists. From these gardens come some of the flavours featured on the menu of Herons West Coast Kitchen + Bar.
Executive Chef Hauser, the first female to hold that post in the long and colourful history of Fairmont Hotels & Resorts, discovered her enthusiasm for cooking while studying Psychology at the Memorial University of Newfoundland. During her studies, she craved a career that combined her love for food and travel . She apprenticed at Fairmont Jasper Park Lodge where the Executive Chef immediately recognized a natural talent and offering Dana the option to complete her apprenticeship at the resort. She immediately enrolled in the Southern Alberta Institute of Technology’s professional cooking program. From the shores of Bermuda to the epicenter of Toronto; Chef Hauser has an extensive career with Fairmont Hotels & Resorts. With her love and understanding of the ocean, Chef Hauser is putting her own stamp on the many menus of this great hotel.
She is devoted to fresh, regional, sustainable and seasonal ingredients – just read her menus. She pan sears wild B C salmon to serve with fennel purée. fava beans. chanterelle mushroom and a truffle vinaigrette; she roasts West Coast rockfish and serves it with Dungeness crab risotto. asparagus tips and aurora sauce. There’s B.C. halibut and, in the spring, spot prawns steal the show. There are always house-made ice creams and B.C.artisanal cheese or you can take away a box of “Bee’s Knees Chocolate Truffles” made with her own roof top honey.
