Since Larry and Linda Stewart opened its doors in 1996, the Hardware Grill has been a culinary destination. They understood the concept of “Canadian cuisine” from their earliest days. They call it “Haute Comfort Food.”
The menu reflects some of the finest ingredients the Prairies have to offer, red meat being one of them. The filet I had last September was so good, so mouth-wateringly tender, that as soon as I left the restaurant I emailed the President of Canada Beef . Finally, after all these years of enjoying steak in its many incarnations, I really understood how great a dish it can be with a masters touch.
My meal began with a fold of applewood-smoked salmon on a tiny truffled potato perogy (HOW EDMONTON!) a spoonful of grainy mustard sauce and some Canadian salmon caviar. Then came a torchon of foie gras from Quebec on the lightest slice of brioche and a sour Prairie cherry gastrique. Then came the most incredible steak ever! Angus beef tenderloin with Cambazola cheese melting atop the richly browned meat. Locally-grown grape tomatoes were lightly sautéed and set beside a bundle of pea shoots.
The Stewarts have created a fine, rare balance in their restaurant…at once familiar and welcoming while remaining elegant and sophisticated. And the kudos have followed. 14 consecutive Wine Spectator Awards of Excellence; Top 50 Wine Restaurants in Canada (Wine Access Magazine); VUE Magazine 2011 Best Fine Dining, Best Service, Best Wine List; In the International Who’s Who of Chefs and on, and on….! Bravo!
