Crave Kitchen and Wine Bar is dedicated to the art of local! Regina-native Executive Chef Jonathan Thauberger has just returned after a 20 years cooking away, most notably at Burrowing Owl in the south Okanagan. He was part of that vibrant culinary scene. He’s a thoughtful, creative chef and brings that vibrant valley-style to Saskatchewan’s capital city.
His menus are absolutely up to the minute in both content and style. Pear and goat cheese tartare, West Coast mussels, house made salt cod beignets…even their version of poutine. The main event is equally smart…from the duck confit and steak frites to slow braised beef short ribs and Quill Creek bison burgers. There are quinoa stuffed cabbage rolls and if you “crave” Lake Diefenbaker steelhead or Lake Winnipeg pickerel, it’s on the menu.
For Food Day Canada 2012, they grilled Quill Creek Bison ribeyes with a saskatoon berry reduction and served forth a beautifully light quinoa-chèvre bread pudding made with quinoa from Northern Quinoa, flour from RJ
