Cava, Cava Restaurant, Cava Toronto, Canadian cuisine, Toronto eatChef Chris McDonald is one of Toronto’s food legends.  For years he owned and cooked at Avalon, consistently in the top 3 restaurants in the city.  AND he used local ingredients.  When he moved to Cava, with its decidedly Spanish tapas theme, it seemed like a bit of an about face.  But Chris uses the ingredients from HERE with the seasonings from THERE.  This is how great cuisine is developed.  We taste the world, then we do it ourselves.

Joanne Kates writes, “Cava is the closest Toronto gets to a tapas bar in Barcelona. McDonald’s culinary alchemy is of such a high order that he can make something as bland and boring as cornmeal come alive: His cornmeal tamale is stuffed with juicy venison and sauced with ancho chilis, wild plum and ice wine lees, a sophisticated delight.” She has included Cava in her Top 100 Restaurants for both 2011 and 2012.

Describing their approach to cooking as “nose-to-tail,” Cava ensures they provide a top notch dining experience while maintaining utmost respect for not just their customers, but for their environment and ingredients as well.
