Executive Chef Brad Lomanto graduated from The Niagara Culinary Institute, then after a learning tour of Italy came back to be truly mentored by Chef Mark Picone, one of the undisputed founders of Niagara wine country cuisine during his tenure at Vineland Estates. As the opening chef at Cambridge, Brad’s mark is fully on the menu, from the roasted Oceanwise-approved Pacific halibut to the spectacular Sunday brunch which is renowned all over Waterloo, Wellington and Perth Counties.
