Like its sister restaurant, Araxi, in Whistler, Blue Water Café is a multi gold medal winner. But at Bluewater, Chef Frank Pabst collects them three at a time.
Chef Pabst was Vancouver Magazine’s 2010 Chef of the Year as well as claiming Restaurant of the Year and Best Seafood. This is a remarkable feat.
“Executive chef Frank Pabst dazzles, as he has for years, with his stellar menu highlighting locally sourced, sustainable seafood. Pabst’s oversight of the kitchen is complemented by Yoshiya Maruyama’s ’s beautifully fastidious, expertly crafted sushi.”…”Add to the mix a burgeoning cocktail program and a knockout wine list, courtesy of award-winning wine director Andrea Vescovi. Marry all that with seamless front-of-house service and it adds up to a superlative dining experience,”- Vancouver Magazine 2010.
So what’s the secret?
When last I spoke to him, this soft spoken culinary creator was clear…”I don’t cook for awards, I leave them in the hands of others. I cook for my guests and now (after the Van Mag blessing) their expectations are higher than ever,”. The pressure is on. For a chef, being constantly inspired can be a challenge. For Frank, with his expansive European heritage, he heads to the small markets of Vancouver and then simply listens to the seasons. He throws huge, genuine kudos to the team that surrounds him and in particular Yoshia Maruyama of their Raw Bar, and Pastry Chef Jean-Pierre Sanchez.
In 2011, the Blue Water won its fourth consecutive Platinum (Best Overall) Wine List Award at the Vancouver Playhouse International Wine Festival, as well as second consecutive awards for Best Seafood and
Best Fish & Shellfish at the Georgia Straight Golden Plate Awards.
