Near a village called Paradise, Atlantica at The Beach House, is a bit of heaven on its own and the kitchen is one of the best in the nation thanks to Chef Stephen Vardy, a Newfoundlander who has finally had a reason to ‘come home’. He made a huge (and well deserved) name for himself in other parts of Canada, particularly in Ottawa where he charmed politicians and rock stars alike – Chef Vardy has been called the “Bob Dylan of cooking”. In 2006 he was named Ottawa Chef of the Year Award. Wine master Natalie Maclean compared his cuisine to “Renoir meeting Jackson Pollock.”
Now after working with a host of other great chefs (Michael Smith, Stephen Beckta and Robert Bourassa, all who participate in Food Day Canada), he’s back on “the rock” creating an incredible menu that pays homage to the ingredients of the region and as well as the talent of his restaurant team.
