The Inn at Low Tide
The recipes from the Amherst Shore Country Inn have graced a number of my food books and writing. The Laceby family, who started their inn-keeping careers in 1980 near Amherst on Nova Scotia’s Sunrise Trail, before tackling the massive restoration of The Blomidon Inn in Wolfville, have been hosting and cooking for their traveling guests for many years.
Amherst Shore is on the Northumberland Strait, looking towards P.E.I. There, for years, Donna Laceby made amazing meals. She did country cooking at its best, harvesting the garden for fresh greens to the region for some of the first cultivated wild blueberries in Canada. She made rich lobster Newburg and perfectly baked halibut. Meanwhile her husband, Jim, hosted and regaled guests with stories.
Today their son Rob and his wife, Mary, operate the inn. They understand the real meaning of hospitality. The menu changes daily in the dining room, easily paired with wines they have assembled including some of my own favorite N.S. vintages from nearby Jost Vineyards,
