The Restaurant at Watermark Beach Resort is a ‘share plates’ restaurant where guests are encouraged to dine family-style. The restaurant has partnered with the Vancouver Aquarium and OceanWise to guarantee the fish dishes are certified “sustainable”. The meats are free-range, grass-fed, hormone-free and ethically farmed, and are sourced from Pemberton to the Fraser Valley and into the Okanagan and Interior.
Situated in the middle of the South Okanagan wine region, the wine list is an extraordinary collection of British Columbian vintages. Cocktails, too, for that matter use the spirits from the region. The beverages are a reflection of everything that’s micro: micro-breweries, micro-distilleries and some of the finest small wineries in Western Canada. The resort is also in the middle of the south Okanagan growing region with produce that rivals any in the nation.
Chef Adair Scott is an integral part of the Okanagan community. He has worked with a number of chefs in the region, including being mentored by Paul Cecconi, one of BC’s most creative chefs. As Executive Chef, Mr. Scott oversees the entire culinary operation from the Wine & Tapas Bar, to the banquets, and the summer barbecues on the deck.
