Chef Ian Riddick’s career in Canada is long and rich. But nothing could really have prepared him for the magnificence of having access to the ingredients of a coastal rainforest, particularly in working with the extraordinary bounty of local seafood. “You would think that would be obvious but we are also blessed with a climate for foraging 12 months a year! Local ling cod is by far my favourite fish to cook – its nice fat content lends itself to a wider variety of techniques.”
He also puts in a plug for the Clayoquot Sound Dungeness crab the he’s able to serve fresh caught 12 months a year…a situation that is really quite unique in Canada. He goes on to write “I have never lived anywhere like this in my life, the variety and volume of edible mushrooms is incredible. I take guests foraging from August until November and we serve local mushrooms all year fresh and preserved.”
