The Delta Bessborough, Saskatoon, Saskatchewan
The Bessborough is one of Canada’s iconic railway hotels built to supplement the gracious train travel of the day by the Canadian National Railway.
Designed in that familiar castle-style using Tyndall stone from Manitoba, bricks from Claybank, Saskatchewan and tiles from Estevan several hours to the northeast, it was a massive, depression-era project.
Today it’s a landmark in the lively Prairie city of Saskatoon and overlooks the south Saskatchewan River.
Executive Chef Darren Craddock, a veteran of Food Day Canada, has just joined the team. With experience that ranges from Toronto’s Royal York and King Edward to Alberta’s Jasper Park Lodge before landing in Saskatoon and with a number of wins at Gold Medal Plates under his belt, he’s ready to reinvent the food-scape of this grand old property using the great ingredients of the surrounding farms, forests and lakes.
