Sweetwater Restaurant, Kemble, Ontario

Sweetwater Restaurant is part of the aptly named Cobble Beach Golf Resort on the rocky western shore of Georgian Bay just north of the picturesque city of Owen Sound.  The beaches here are strewn with cobbles and the water is so fresh that neighbouring cottagers routinely run pipes out into the bay to tap this precious resource. The view alone is worth the trip to Sweetwater but combine it with the lovely, locally-inspired cuisine of Chef Tim Johnston for a great culinary outing even if you don’t play a round of golf.

Chef Johnston is one of Canada’s hidden talents….just check out his Instagram account to see for yourself by heading to @Cheftj80.  The braised pork shoulder with steamed buns would be happy on any Manhattan menu.

He makes his own kimchi and pasta as he did for this spinach linguini topped with seared striped bass dish and honey mushrooms.  In the winter he takes the time to build his repertoire of charcuterie from salami to coppa to pancetta. The one dish that he can’t take off the menu is his Georgian Bay whitefish and chips.  It sounds simple but the whitefish is among the finest freshwater fishes in all of Canada and in his hands, it’s perfection.
