Les Brumes du Coude, Moncton, New Brunswick

The tag line for this great Moncton restaurant is “Un Bistrot Presque Traditionnel” — an almost traditional bistro.  Located in the Moncton’s Aberdeen Cultural Centre, there would be no better description, combining the heritage of the Acadian peoples, the First Nations and the various settlers who transposed their culinary traditions to this new landscape.  

The goal of the Aberdeen is to remain conscious and respectful of the community’s history and cultural heritage while being equally dedicated to working toward a contemporary vision of Acadie.  Several of the city’s chefs have also embraced that vision including Les Brumes du Coude’s chef-propriétaire Michel Savoie who, in addition to being an extremely talented chef is a collector of archival quality French language cookbooks. 

Les Brumes du Coude is Chef Savoie’s personal statement.  His blackboard menus reflect some of the most seasonal and best ingredients anywhere in New Brunswick from all the bread he bakes daily and the chanterelles he pickles to some of the finest oysters in the country.
