Flying Apron Inn & Cookery, Summerville, Nova Scotia
The Flying Apron Inn & Cookery is a true family enterprise. Chris (Uwe) Velden and his wife, Melissa, are likely best recognized in Nova Scotia as Hubbard’s and Lunenburg Farmers Market vendors. Their mission statement reads: “Our mission is to showcase Nova Scotia Foods and the Farmers that grow them through unique Culinary Education events and Locally Sourced, Honest Food offerings.”
I first got to know Chris at the Canadian Chefs Congress in Wolfville where he was roasting several rather large pigs. His commitment to the regional food movement has translated into his being very active in the Nova Scotia Chapter of Slow Food.
The Inn is situated in a landmark property in Summerville, a small community, in the Annapolis Valley and near the Minas Basin. They are in serious action central for Nova Scotia’s best fruit and vegetable production region so as their menus unfold and their cookery classes begin, my prediction is that the Veldens will become the go-to cooking school for foodies from across the region to learn how to handle the great ingredients of Nova Scotia.
